Ingredients

  • 4 large tomatoes or 8 medium tomatoes
  • ½ bunch flat-leaf parsley, washed and chopped
  • 1 chopped onion
  • 600 g sausage meat or minced beef
  • 200 g tomato sauce
  • 4 large potatoes, peeled and diced
  • 20 g butter
  • Breadcrumbs
  • Olive oil
  • Fine salt and ground pepper / coarse salt

Preparation Steps

  1. In a pan of salted water, cook the diced potatoes until tender, then drain without rinsing. Place them in the bottom of the baking dish for the stuffed tomatoes.
  2. Preheat the oven to 200°C.
  3. In a hot casserole, add a dash of olive oil, sauté the onion until lightly colored. Add the meat and cook through.
  4. Meanwhile, cut the tops off the tomatoes, empty them with a spoon without piercing the sides, and reserve the insides in a ramekin. Chop the tops and add to the ramekin.
  5. Add the reserved tomato pieces to the cooked meat, along with chopped parsley and tomato sauce. Simmer for 15-20 minutes.
  6. Arrange the potatoes in the baking dish. Stuff the tomatoes with the meat mixture, sprinkle with breadcrumbs, and place on top of the potatoes. Add a small cube of butter to each tomato, a splash of water to the dish, and bake for 10-15 minutes.
