Ingredients
- 4 large tomatoes or 8 medium tomatoes
- ½ bunch flat-leaf parsley, washed and chopped
- 1 chopped onion
- 600 g sausage meat or minced beef
- 200 g tomato sauce
- 4 large potatoes, peeled and diced
- 20 g butter
- Breadcrumbs
- Olive oil
- Fine salt and ground pepper / coarse salt
Preparation Steps
- In a pan of salted water, cook the diced potatoes until tender, then drain without rinsing. Place them in the bottom of the baking dish for the stuffed tomatoes.
- Preheat the oven to 200°C.
- In a hot casserole, add a dash of olive oil, sauté the onion until lightly colored. Add the meat and cook through.
- Meanwhile, cut the tops off the tomatoes, empty them with a spoon without piercing the sides, and reserve the insides in a ramekin. Chop the tops and add to the ramekin.
- Add the reserved tomato pieces to the cooked meat, along with chopped parsley and tomato sauce. Simmer for 15-20 minutes.
- Arrange the potatoes in the baking dish. Stuff the tomatoes with the meat mixture, sprinkle with breadcrumbs, and place on top of the potatoes. Add a small cube of butter to each tomato, a splash of water to the dish, and bake for 10-15 minutes.
