For 4 servings:

  • 500 cl water
  • 15 cl dashi broth in sachet
  • 250g firm fresh tofu
  • 100g miso paste
  • 10g dried wakame seaweed
  • A few shiitake mushrooms
  • 1 spring onion
  • Seasonal vegetables like snow peas or leeks (optional)
  • Shichimi togarashi spice mix (optional)

Step-by-step preparation:

  1. Prep and steam your chosen vegetables. Set aside.
  2. Cube the tofu into small pieces.
  3. In a saucepan, gently heat water and dashi over low heat (do not boil) for 4 minutes.
  4. Add tofu cubes.
  5. In a separate bowl, ladle some broth, stir in miso paste until dissolved.
  6. Pour the mixture back into the pan and stir gently.
  7. Add wakame, chopped spring onion, and vegetables. Heat for 2 more minutes.
  8. Taste and adjust with shichimi togarashi if desired.
  9. Serve hot in small bowls.
