As a leading pastry chef with over a decade of experience, Géraldine Granzan knows wedding season inside out. From early June through August, her schedule fills with celebrations—and this year, she's crafting hanging cakes for three weddings weekly at her business, Cake in the Air, founded in 2012.
Hailing from the UK and US, these suspended wedding cakes resemble traditional tiers but balance daringly on a seesaw-like structure, sometimes even inverted. 'Couples choose them as the ceremony's centerpiece—a stunning work of art,' says Granzan. During tasting sessions, they design every detail, adding edible jewels and ornaments for a personal touch.
Fueled by the quest for uniqueness, they're exploding on Pinterest and Instagram. As Granzan shared with the Huffington Post: 'The cake's exterior stays classic, but the interior is more delicate to accommodate the suspension system for flower arches in circular or heart shapes.' This precision demands time and skill, reflected in the premium price—around €700 for the arch alone. For unforgettable moments, it's worth every cent.
