Ingredients
  • 200g water
  • 90g sugar
  • 200g honey + 25g for finishing
  • 10g untreated lemon zest
  • 10g untreated orange zest
  • Pulp of 1 vanilla pod
  • 3g gingerbread spices
  • 200g flour
  • 1 tbsp. baking powder
  • 10g baking soda
  • 1 pinch fine salt
  • 140g butter + 10g for the mold
Preparation
  • Preheat oven to 180°C.
  • Boil water with sugar and honey. Add lemon and orange zests, vanilla, and spices.
  • In a bowl, combine flour, baking powder, baking soda, and salt.
  • Gradually add the hot syrup while stirring.
  • Melt butter and incorporate into the batter.
  • Pour into a buttered mold.
  • Bake for 20 minutes.
  • Cool in the mold, brush with melted honey, then unmold when cold.
