Ingredients
Crêpe batter:
- 300g flour
- 3 eggs
- 2 tbsp. oil
- 70cl whole milk
- 3 tbsp. sugar
- 5 cl orange blossom
- 1 orange zest
Beurre Suzette:
- 100g softened butter
- 1 orange zest
- Juice of 1 orange + 1 lemon
- 15g icing sugar
- 5cl Grand Marnier (optional)
Finish:
- 25g butter for cooking
- Neutral oil
- 1 orange, peeled and cut into thin rounds or suprêmes
- A few candied zests (optional)
Preparation
- Mix flour and sugar in a bowl. Gradually add eggs, oil, milk, and orange blossom. Grate in orange zest with a microplane. Set aside while preparing Suzette butter.
- In a bowl, combine softened butter, orange juice, and lemon juice. Mix well, add orange zest, icing sugar, and Grand Marnier if using. Chill.
- Heat crêpe maker, oil lightly. Pour batter to form a golden crêpe on both sides. Add a knob of Suzette butter to melt. Fold into quarters. Garnish with orange slices or suprêmes and candied zests.
