Ingredients

Crêpe batter:

  • 300g flour
  • 3 eggs
  • 2 tbsp. oil
  • 70cl whole milk
  • 3 tbsp. sugar
  • 5 cl orange blossom
  • 1 orange zest

Beurre Suzette:

  • 100g softened butter
  • 1 orange zest
  • Juice of 1 orange + 1 lemon
  • 15g icing sugar
  • 5cl Grand Marnier (optional)

Finish:

  • 25g butter for cooking
  • Neutral oil
  • 1 orange, peeled and cut into thin rounds or suprêmes
  • A few candied zests (optional)

Preparation

  1. Mix flour and sugar in a bowl. Gradually add eggs, oil, milk, and orange blossom. Grate in orange zest with a microplane. Set aside while preparing Suzette butter.
  2. In a bowl, combine softened butter, orange juice, and lemon juice. Mix well, add orange zest, icing sugar, and Grand Marnier if using. Chill.
  3. Heat crêpe maker, oil lightly. Pour batter to form a golden crêpe on both sides. Add a knob of Suzette butter to melt. Fold into quarters. Garnish with orange slices or suprêmes and candied zests.
