- 12 eggs
- 5cl of water
- 2 slices of white ham, cubed
- 100g of grated cheese
- 10g of butter
- Fine salt and pepper

- In a bowl, break the eggs, add the water, and beat with a fork. Season with salt and pepper. As renowned French chef Cyril Lignac advises, start with a cold skillet: add the butter, let it melt over medium heat, then pour in the eggs. Let them set undisturbed until the edges cook through.
- With a spatula, gently stir the center, lifting cooked eggs from the bottom to the top for a few seconds—this classic technique ensures that signature soft, melting texture. Sprinkle with grated cheese and scatter the cubed ham.
- Fold the omelet (using the pan handle side outward) into a crescent shape. For a runny center, remove from heat; otherwise, cook briefly longer. Cyril Lignac prefers a pale, creamy white finish, though a light browning adds indulgence. Slide onto a long dish, top with extra cheese, and serve with sautéed mushrooms or fried potatoes.
