  • Unroll the very cold puff pastry onto a work surface sprinkled generously with sugar.
  • Sprinkle additional sugar over the dough and spread evenly across the surface.
  • Fold dough in half to mark it, then unfold. Fold edges inward from both sides, creating three creases per side.
  • Continue folding: first fold each side in, second fold, third fold, until edges meet—ensuring sugar coats everything.
  • Halve the folded log, then slice into 1.5 cm thick pieces (16-17 palmiers). Arrange staggered on a non-stick baking sheet (no butter, silicone, or parchment needed).
  • Bake at 180°C for 20 minutes. Cool on a wire rack.
