Ingredients

  • 3 eggs
  • 250 ml milk + 100 ml fresh cream
  • 2 tablespoons flour
  • 100 g grated Gruyère cheese

This forms the batter; flour ensures it sets firmly without collapsing. Add your fillings, such as:

  • 1 large onion, finely chopped
  • 125 g bacon cubes, fried and drained on paper towel
  • Vegetables diced small (brunoise): carrot, leek, bell pepper, tomato, broccoli, cauliflower, mushrooms, or more
  • Chicken, salmon, ham…
  • Leftovers from previous meals (best if they pair well)
  • Chopped parsley or other fresh herbs

Preparation Method

  • Mix milk, cream, eggs, flour, and cheese in a large bowl until smooth.
  • Add vegetables and meat.
  • Season with salt and pepper.
  • Pour into a mold (silicone works best for easy release).
  • Bake in a preheated oven at 200°C (fan-assisted) for 30 minutes.

Et voilà—your crustless quiche is ready. Serve hot and enjoy!
