Ingredients

  • 1 packet instant yeast (7g)
  • 240 ml almond milk (or regular milk)
  • 112 g butter
  • 1/4 tsp salt
  • 405 g flour
  • 1.5 tsp cinnamon
  • 70 g cane sugar
  • 1 tbsp cane sugar
  • Oil (for greasing)

Instructions

  1. Heat the milk with 3 tbsp butter in a pan over medium heat until melted—aim for about 43°C. Don't boil, or you'll kill the yeast.
  2. Pour into a bowl, add yeast, and let activate for 10 minutes.
  3. Stir in 1 tsp sugar and salt.
  4. Gradually add flour, stirring until sticky. Knead briefly on a floured surface to form a ball.
  5. Oil the bowl, add dough, cover with cling film.
  6. Let rise in a warm spot for 1 hour until doubled.
  7. Roll into a rectangle.
  8. Spread with 3 tbsp melted butter, then 70g cane sugar mixed with ½-1 tsp cinnamon (adjust to taste).
  9. Roll tightly into a log (use baking paper for ease).
  10. Slice into 12 equal pieces, place on lined tray with space to rise. Optional: Brush with remaining butter.
  11. Cover and rise near a preheating oven at 175-200°C.
  12. Bake 25-30 minutes until golden.
  13. Top with sugar glaze, chocolate, or cream cheese frosting as desired.
