Food processor • 15 x 15 cm baking tin • baking paper

Ingredients

  • 150 g grated coconut + extra for garnish
  • 2 tbsp coconut oil, melted
  • 2 tbsp agave syrup
  • ½ tsp vanilla extract
  • pinch of salt
  • 100 g dark chocolate (min. 80% cocoa)

Preparation

  1. Heat a large frying pan and roast the grated coconut, stirring until lightly beige, for about 5 minutes. Let cool on a plate.
  2. Place the coconut, coconut oil, agave syrup, vanilla extract, and salt in a food processor and blend briefly.
  3. Line the baking tin with baking paper. Spoon in the coconut mixture, smooth it out, and freeze for about 4 hours.
  4. Melt the chocolate in a bain-marie.
  5. Line a baking tray with baking paper. Cut the coconut into 9 large bites and dip them halfway into the melted chocolate using a cocktail stick or by hand. Place on the paper.
  6. Sprinkle half of the chocolate-dipped bites with extra grated coconut. Store in an airtight container in the refrigerator.
