My Sister's Decadent Molten Chocolate Lava Cakes

Ingredients

  • 250 g dark cooking chocolate
  • 200 g unsalted butter
  • 5 organic eggs
  • 150 g icing sugar
  • 50 g flour

Preparation

Melt the dark chocolate and butter together in a double boiler (bain-marie). In a bowl, whisk the whole eggs until smooth. Gradually pour the melted chocolate mixture over the eggs, whisking continuously to combine.

Stir in the icing sugar and flour until just incorporated. Add a flavor of your choice, such as organic orange zest or rum, for extra depth.

Butter individual ramekins and divide the batter evenly among them.

Preheat oven to 200°C. Bake for 7 to 10 minutes, depending on your oven and ramekin size. Watch closely—the center should remain lusciously molten, flowing out when cut with a spoon!

Prepare the batter ahead, chill in the ramekins for a few hours, and bake fresh—the results are even better with rested batter.
