- Wash the apples and core them using an apple corer or paring knife to remove the seeds.
- Prepare the syrup by boiling water and caster sugar until it reaches the desired consistency, then let it cool.
- Arrange the apples in an ovenproof dish and preheat the oven to 150°C.
- Fill the apple centers with brown sugar, drizzle with syrup, top the sugar with a knob of semi-salted butter, and sprinkle with cinnamon, four spices, and Espelette pepper.
- Bake for about 40 minutes, basting occasionally with the pan juices for even flavor infusion.
- Remove from the oven, fill the centers with Mirabelle plum jam, and return briefly to set the glaze.
