  1. Wash the apples and core them using an apple corer or paring knife to remove the seeds.
  2. Prepare the syrup by boiling water and caster sugar until it reaches the desired consistency, then let it cool.
  3. Arrange the apples in an ovenproof dish and preheat the oven to 150°C.
  4. Fill the apple centers with brown sugar, drizzle with syrup, top the sugar with a knob of semi-salted butter, and sprinkle with cinnamon, four spices, and Espelette pepper.
