This traditional Russian apple cake, inspired by cherished recipes from Les Bons Desserts, combines moist batter with cinnamon-spiced apples and a glossy apricot glaze. As a baking enthusiast with years perfecting Eastern European desserts, I recommend this foolproof recipe for its simple elegance and crowd-pleasing flavor.
Ingredients
- 3 egg yolks
- 200g caster sugar
- 75g melted butter
- 1 packet vanilla sugar
- 1 pinch cinnamon
- 1 packet baking powder
- 375g flour
- 1 pinch salt
- 3 beautiful apples
- 2 tablespoons apricot jelly
- 2 glasses milk
- Icing sugar, for dusting
Instructions
- Separate the egg whites from the yolks. Beat the yolks with the caster sugar until the mixture turns pale and creamy.
- Incorporate the melted butter, vanilla sugar, cinnamon, baking powder, salt, and sifted flour. Gradually add the milk to form a soft, smooth batter.
- Pour the batter into a buttered and floured cake mold.
- Prepare the apples: Cut into quarters, keeping each whole. Make shallow slices into each quarter without cutting all the way through, so the slices remain attached at the base. Arrange them at regular intervals on top of the batter.
- Bake in a preheated medium oven (th. 5-6, 210°C) for 40 minutes.
- Warm the apricot jelly and generously brush it over the apple quarters. Return to the oven for 5 more minutes.
- Allow to cool completely, then dust with icing sugar before serving.
