Ingredients
- 800 g floury potatoes
- 20 g pine nuts
- 50 g pitted black olives
- 50 g sun-dried tomatoes in oil
- 1 handful fresh basil leaves
- 200 ml milk
- Ground dried chili pepper
- Also needed: potato masher or pestle

Preparation
- Peel and wash the potatoes, cut into chunks, and boil for 15-20 minutes until tender.
- Meanwhile, toast the pine nuts in a dry frying pan until golden brown, then cool and coarsely chop. Finely chop the olives and sun-dried tomatoes. Stack and coarsely chop the basil leaves.
- Drain the potatoes and let steam dry briefly.
- Warm the milk with 3 tablespoons olive oil in a saucepan or microwave.
- Mash the potatoes until crumbly, then gradually stir in the warm milk mixture for a smooth puree.
- Fold in the pine nuts, olives, tomatoes, and basil. Season to taste with salt and chili pepper.
