Mediterranean Mashed Potatoes Recipe: Flavorful Side Dish for 4

Ingredients

  • 800 g floury potatoes
  • 20 g pine nuts
  • 50 g pitted black olives
  • 50 g sun-dried tomatoes in oil
  • 1 handful fresh basil leaves
  • 200 ml milk
  • Ground dried chili pepper
  • Also needed: potato masher or pestle

Preparation

  • Peel and wash the potatoes, cut into chunks, and boil for 15-20 minutes until tender.
  • Meanwhile, toast the pine nuts in a dry frying pan until golden brown, then cool and coarsely chop. Finely chop the olives and sun-dried tomatoes. Stack and coarsely chop the basil leaves.
  • Drain the potatoes and let steam dry briefly.
  • Warm the milk with 3 tablespoons olive oil in a saucepan or microwave.
  • Mash the potatoes until crumbly, then gradually stir in the warm milk mixture for a smooth puree.
  • Fold in the pine nuts, olives, tomatoes, and basil. Season to taste with salt and chili pepper.
