Refreshing Chilled Green Apple Soup in Apple Cups

Ingredients (Serves 6)

  • 6 Granny Smith green apples
  • 1 cucumber
  • 2 tomatoes
  • 4 white onions
  • 2 limes
  • 2 tablespoons olive oil
  • 12 sprigs cilantro
  • 3 drops Tabasco
  • Salt and ground black pepper, to taste

Preparation Time

  • 30 minutes (plus 1 hour chilling)

Instructions

  1. Cut the tops off the apples and scoop out the flesh using a teaspoon, without piercing the skin. Remove the core and seeds. Squeeze juice from 1 lime into the apple shells to prevent browning.
  2. Blend the apple flesh with the onions, peeled cucumber (reserve 6 thin slices for garnish), 6 sprigs cilantro, olive oil, juice of the second lime, Tabasco, salt, and pepper until smooth and creamy.
  3. Chill the soup for 1 hour.
  4. Fill the apple shells with the chilled soup. Garnish with diced tomatoes, reserved cucumber slices, and remaining cilantro sprigs.
  5. Serve chilled for a fresh, vibrant starter.
