Refreshing Chilled Green Apple Soup in Apple Cups
Ingredients (Serves 6)
- 6 Granny Smith green apples
- 1 cucumber
- 2 tomatoes
- 4 white onions
- 2 limes
- 2 tablespoons olive oil
- 12 sprigs cilantro
- 3 drops Tabasco
- Salt and ground black pepper, to taste
Preparation Time
- 30 minutes (plus 1 hour chilling)
Instructions
- Cut the tops off the apples and scoop out the flesh using a teaspoon, without piercing the skin. Remove the core and seeds. Squeeze juice from 1 lime into the apple shells to prevent browning.
- Blend the apple flesh with the onions, peeled cucumber (reserve 6 thin slices for garnish), 6 sprigs cilantro, olive oil, juice of the second lime, Tabasco, salt, and pepper until smooth and creamy.
- Chill the soup for 1 hour.
- Fill the apple shells with the chilled soup. Garnish with diced tomatoes, reserved cucumber slices, and remaining cilantro sprigs.
- Serve chilled for a fresh, vibrant starter.
