Pasadena Shrimp Salad Recipe: Fresh, Crisp & Ready in 30 Minutes

Ingredients (Serves 4)

  • 2 cucumbers
  • Coarse salt
  • 2 stalks celery
  • 1 stalk tarragon
  • 160g shelled prawns
  • 3 tablespoons fresh cream
  • 1 lemon
  • Pepper
  • Salt

Instructions

  1. Peel and thinly slice the cucumbers. Sprinkle with coarse salt, drain for 30 minutes, then rinse and drain well.
  2. Wash the 2 celery stalks and 1 tarragon stalk.
  3. In a salad bowl, mix sliced cucumbers, finely chopped celery, tarragon leaves, and prawns.
  4. Add 3 tablespoons fresh cream and lemon juice. Season with pepper, stir, and salt to taste.
