Pasadena Shrimp Salad Recipe: Fresh, Crisp & Ready in 30 Minutes

Ingredients (Serves 4)
- 2 cucumbers
- Coarse salt
- 2 stalks celery
- 1 stalk tarragon
- 160g shelled prawns
- 3 tablespoons fresh cream
- 1 lemon
- Pepper
- Salt
Instructions
- Peel and thinly slice the cucumbers. Sprinkle with coarse salt, drain for 30 minutes, then rinse and drain well.
- Wash the 2 celery stalks and 1 tarragon stalk.
- In a salad bowl, mix sliced cucumbers, finely chopped celery, tarragon leaves, and prawns.
- Add 3 tablespoons fresh cream and lemon juice. Season with pepper, stir, and salt to taste.
