Ingredients

  • 3 kg wild boar
  • 1 onion
  • 1 kg fat
  • 1 whole boar liver
  • 20 g salt
  • 4 g pepper
  • 3 g cinnamon
  • 6 g flour
  • 2 bay leaves
  • 1 or 2 sage leaves
  • 2 or 3 sprigs thyme
  • 1 handful parsley
  • 90 g onion
  • 1 large clove garlic
  • 30 g cream
  • 1 egg

Preparation

Finely grind the bay leaves, sage, thyme, parsley, onions, and garlic. Combine with all remaining ingredients to form a smooth mixture.

Pack into sterilized jars, top each with a bay leaf, and process in a sterilizer for at least 3 hours. Enjoy this rich, gamey pâté straight from the jar or spread on crusty bread.
