Roquefort Pork Tenderloin en Papillote: Easy French Recipe for Tender Flavor

Ingredients (Serves 4)

  • 1 pork tenderloin
  • 50cl fresh cream
  • 90g Roquefort cheese
  • 2 onions
  • Mustard
  • Oil
  • Parsley

Instructions

  1. In a skillet, sear the pork tenderloin in oil until browned on all sides, then set aside.
  2. Chop the onions and sauté them in the same pan until softened and reduced.
  3. Mash the Roquefort cheese in a bowl. Mix in the fresh cream, chopped parsley, and 2 teaspoons of mustard. Season with salt and pepper to taste.
  4. Layer two aluminum foil sheets perpendicularly. Place the tenderloin in the center, top with onions and cheese mixture, then seal tightly to form a papillote packet.
  5. Bake in a preheated oven at 220°C (thermostat 7) for 45 minutes.
