Ingredients for 6 servings

  • 1 large can chickpeas or 200 g dried
  • 3 ripe tomatoes (or equivalent cherry tomatoes)
  • 1/2 green or yellow bell pepper
  • 1 garlic clove
  • A few sprigs fresh mint
  • A few sprigs fresh coriander
  • 12 black olives
  • Juice of 1/2 lemon
  • 1/2 cup olive oil
  • Salt and pepper, to taste

Instructions

Combine all ingredients in a large salad bowl: rinsed and well-drained chickpeas, lemon juice, finely chopped bell pepper, olive oil, pressed garlic, chopped mint and coriander, sliced olives, diced tomatoes, salt, and pepper.

Chill in the refrigerator for a fresh, vibrant salad ready to serve.
