Ingredients:
100g fresh white Mediterranean fish fillet (amberjack, sea bass, mahi-mahi, etc.)
Juice of half a lime
Maldon sea salt
2 tbsp extra virgin olive oil, light and fruity
Grated lime zest (½ lime)
Fresh mild chili – to taste
1 tbsp lightly toasted pine nuts
1 tbsp lightly toasted pistachios
6-7 fresh oregano leaves
2-3 basil leaves

Preparation:
1. Select a wide, flat plate.
2. Slice the fish into 0.5mm thin pieces and arrange on the plate.
3. Generously sprinkle with sea salt and drizzle with olive oil.
4. Shave lime zest over the top and slice chili wafer-thin (to taste).
5. Scatter toasted pine nuts, pistachios, and oregano leaves evenly.
6. Finely chiffonade the basil and sprinkle over the dish.
