Kormos Recipe: Ftou's Irresistible Modern Greek Chocolate Dessert

During tough times, nothing beats comforting homemade treats. At Ftou in Rotterdam's Foodhallen, we've perfected Kormos—a traditional Greek dessert elevated with rich chocolate. This no-bake delight is simple to make and impossible to resist. Indulge generously.

Ingredients for Kormos
300 g milk chocolate
300 ml full cream
1 pack Maria biscuits
150 g pistachio nuts
3 tablespoons cognac

Preparation time: 20 minutes

  1. Roughly crumble the Maria biscuits—no precision needed; it's forgiving and a fun task for kids.
  2. Finely chop the pistachio nuts. Substitute with your preferred nuts if desired.
  3. Heat the cream, chocolate, and cognac in a bain-marie, stirring gently until melted and smooth. Avoid boiling to keep the perfect texture (though ganache is tasty too).
  4. Fold in the crumbled biscuits and nuts.
  5. Line a loaf pan with baking paper, pour in the mixture, and sneak a quality-control taste from the spoon.
  6. Freeze until firm to the touch.
  7. Slice and serve when set. Portion extras, wrap in cling film, and store in the freezer for anytime cravings.
