Caesar salad by Cyril Lignac:a light and delicious recipe (“His sauce is incredibly good!”)

The Caesar salad , or Caesar salad, is a classic easy to eat all year round. It must be said that it has something to make our mouths water. Composed of romaine lettuce, bread croutons, grilled chicken, parmesan and a creamy sauce, this mixed salad is both fresh, crunchy and delicious. For the record, this dish would be an American specialty , improvised in the 1920s by chef Caesar Cardini in his restaurant on the Mexican border.

Cyril Lignac's advice for a successful Caesar salad dressing

For chef Cyril Lignac the secret to a delicious caesar salad lies in its seasoning. A delicate but essential step to give all its flavors to the dish. This sauce is an emulsion made from eggs, anchovy paste, garlic, grated parmesan and wine vinegar. All the ingredients are mixed together. To this we add olive oil, liquid cream, a little tabasco and a few drops of Worcestershire. The chef's tip , unveiled on RTL :pour in lemon juice to give pep and freshness to the whole.

The Caesar salad recipe revisited by Cyril Lignac

Preparation time:15 minutes.
Cooking time:5 minutes.

To make a Caesar salad for 4 people you will need:

  • 2 very long romaine lettuce
  • 2 chicken breasts
  • 5 eggs
  • 30g bread croutons
  • 1 piece of parmesan cheese
  • 1 clove of garlic
  • 20g anchovy paste
  • 1 tablespoon of wine vinegar
  • 7 cl of olive oil
  • 50 g full cream
  • a few drops of Worcestershire sauce
  • Tabasco
  • Salt
  • 1 lemon

Preparation steps:

  1. In a saucepan, cook four eggs for 10 minutes. You get hard-boiled eggs.
  2. Cut the chicken breasts then, in a skillet over low heat, cook them. Reserve.
  3. In a blender, add a hard-boiled egg with a fresh egg yolk, anchovy paste, garlic and a piece of parmesan. Mix then pour in the vinegar and the juice of half a lemon. Blend again.
  4. Then, add the olive oil little by little, the liquid cream, a little tabasco and a few drops of Worcestershire sauce. Mix and keep aside.
  5. In a plate, cut the romaine lettuce in half and hollow it out. Season with a little olive oil, salt and pepper.
  6. Add the chicken pieces, bread croutons, chopped hard-boiled eggs. And on top put the caesar sauce.
  7. Grate some parmesan and pour the rest of the lemon juice.
