Cyril Lignac's Caesar Salad Recipe

Preparation time: 15 minutes.
Cooking time: 5 minutes.

For 4 servings:

  • 2 very long romaine lettuces
  • 2 chicken breasts
  • 5 eggs
  • 30g bread croutons
  • 1 piece of Parmesan cheese
  • 1 clove of garlic
  • 20g anchovy paste
  • 1 tablespoon of wine vinegar
  • 7 cl olive oil
  • 50g heavy cream
  • A few drops of Worcestershire sauce
  • Tabasco
  • Salt
  • 1 lemon

Step-by-step preparation:

  1. In a saucepan, cook four eggs for 10 minutes to hard-boil them.
  2. Slice the chicken breasts and cook in a skillet over low heat. Set aside.
  3. In a blender, combine one hard-boiled egg, one fresh egg yolk, anchovy paste, garlic, and a piece of Parmesan. Blend, then add vinegar and juice of half a lemon. Blend again.
  4. Gradually pour in the olive oil, followed by heavy cream, a little Tabasco, and Worcestershire sauce. Blend until smooth and set aside.
  5. On a platter, halve the romaine lettuces lengthwise and hollow them out slightly. Drizzle with olive oil, salt, and pepper.
  6. Top with chicken pieces, croutons, and chopped hard-boiled eggs. Drizzle with Caesar dressing.
  7. Grate Parmesan over the top and squeeze the remaining lemon juice.
    Enjoy immediately!
