Chef Cyril Lignac's Red Fruit Sorbet Recipe

For 4 servings:

  • 150 g French strawberries (for maximum flavor)
  • 150 g raspberries
  • 100 g sweetened condensed milk or soy milk
  • Red hibiscus tea (optional)
  • 1 tablespoon honey
  • Whipped cream (optional)

Preparation steps:

  1. Wash the fruits and hull the strawberries.
  2. Spread the fruits on a tray and freeze overnight.
  3. The next day, remove the tray from the freezer at least 1 hour ahead to thaw slightly.
  4. In a blender, combine the thawed fruits, condensed milk, hibiscus tea leaves (if using), and honey.
  5. Blend until smooth for instant sorbet.
  6. Serve scoops in bowls, topped with whipped cream and fresh fruits if desired.
