Ingredients (makes about 8-10 buns):
– 3 eggs
– 60 g cream cheese (such as Philadelphia)
– 1.25 g baking soda (sodium bicarbonate)
Preheat your oven to 150°C (300°F). Separate the egg yolks from the whites. In a bowl, whisk the cream cheese into the yolks until smooth and lump-free.
Add the baking soda to the egg whites and beat with an electric mixer until stiff peaks form. Gently fold the whites into the yolk mixture using a spatula, preserving as much air as possible.
