Brush the chicken generously with this marinade. Peel the orange and stuff the segments inside the chicken. Place in a roasting dish, pour remaining marinade and juice from one stock cube at the bottom. Roast at 200°C. After 45 minutes, add 2 chopped onions and 4 carrots, basting the chicken with pan juices. Continue roasting for another 45 minutes. Baste regularly to keep it moist and juicy.
