“With this raw soup, we treat ourselves to a super vitalizing dish. It is a "detox" soup because it is very easy to digest (unlike a ham and butter sandwich). It gives the body time to regenerate, and above all, everything we eat will serve us because it is raw, so all the vitamins and enzymes are preserved “, she explains.

In a blender, throw sprouted seeds, a whole raw carrot coarsely cut, fresh ginger with turmeric (an anti-inflammatory better assimilated with ginger), and finally, a whole avocado with the juice of a lemon. Mix everything thoroughly until it becomes a cream. Add hot water and it becomes a soup. To consume immediately because it does not keep.

As an accompaniment, make a grain-free tabbouleh with cauliflower. You put the end of the cauliflower - raw and organic - in a blender, it makes little balls, like semolina. Then add lemon juice, a bunch of chervil, a bunch of parsley, mint, raisins, goji berries, crushed hazelnuts, tomatoes, cucumber, pepper (or seasonal vegetables), and then finally, a spoonful of tamari.

As a seasoning, we make a vinaigrette with two tablespoons of cider vinegar, two tablespoons of sesame oil, 2 teaspoons of spirulina, and emulsify everything.

For dessert, boil 1 liter of organic apple juice with a vanilla pod, 3 stars of star anise, a cinnamon stick, mulberries. Add in the preparation of agar-agar (3 grams for 1 liter). We bring to the boil, turn off the heat, put in verrines, let cool for 3 hours in the fridge, and we have our dessert, almost without calories!
