By happy coincidence, we connected with Angèle Ferreux Maeght, the dynamic young chef and founder of Guinguette d'Angèle—a premier Parisian caterer specializing in superfoods. She crafts revitalizing dishes for her clients. For busy women aiming to stay energized and maintain their figure, Angèle shares these effortless recipes.
"This raw soup is a vitality booster. As a 'detox' option, it's incredibly easy to digest—far better than a ham and butter sandwich. It allows your body to regenerate while preserving all vitamins and enzymes since everything is raw," she explains.
In a blender, combine sprouted seeds, one whole raw carrot (coarsely chopped), fresh ginger with turmeric (an anti-inflammatory best absorbed with ginger), and one whole avocado with the juice of one lemon. Blend until creamy. Add hot water to transform it into soup. Consume immediately, as it doesn't store well.
For a side, prepare grain-free tabbouleh using cauliflower. Blend the raw, organic cauliflower florets into tiny grains like couscous. Mix in lemon juice, chopped chervil, parsley, mint, raisins, goji berries, crushed hazelnuts, tomatoes, cucumber, bell pepper (or seasonal veggies), and a spoonful of tamari.
For dressing, whisk two tablespoons cider vinegar, two tablespoons sesame oil, and 2 teaspoons spirulina until emulsified.
For dessert, simmer 1 liter organic apple juice with a vanilla pod, 3 star anise, a cinnamon stick, and mulberries. Stir in 3 grams agar-agar (for 1 liter). Bring to a boil, remove from heat, pour into verrines, and chill for 3 hours. Enjoy this nearly calorie-free treat!
