Rosalie's Healthy Breakfast
Skip the traditional English "greasy breakfast" and enjoy this nutrient-packed recipe instead. Bursting with vitamins, it's ideal for a leisurely late breakfast or brunch.
Ingredients (Serves 1)
- 2 eggs
- 1 small avocado
- 1 slice country bread
- Juice of ½ lemon
- 1 teaspoon Tabasco
- Olive oil, vinegar, chives, ground pepper, coarse salt
Instructions
- In a small bowl, mix thinly sliced avocado, lemon juice, and Tabasco.
- In a saucepan, bring water to a gentle simmer (about 10cm deep) with 3-4 tablespoons vinegar and a pinch of coarse salt.
- Crack the eggs and poach them gently in the water.
- Lightly toast the bread slice.
- On a large plate, place the toast, drizzle with olive oil, top with avocado mixture, and sprinkle with chopped chives.
- Add the poached eggs, season with ground pepper and a pinch of coarse salt.
