Ingredients (Serves 1)

  • 2 eggs
  • 1 small avocado
  • 1 slice country bread
  • Juice of ½ lemon
  • 1 teaspoon Tabasco
  • Olive oil, vinegar, chives, ground pepper, coarse salt

Instructions

  1. In a small bowl, mix thinly sliced avocado, lemon juice, and Tabasco.
  2. In a saucepan, bring water to a gentle simmer (about 10cm deep) with 3-4 tablespoons vinegar and a pinch of coarse salt.
  3. Crack the eggs and poach them gently in the water.
  4. Lightly toast the bread slice.
  5. On a large plate, place the toast, drizzle with olive oil, top with avocado mixture, and sprinkle with chopped chives.
  6. Add the poached eggs, season with ground pepper and a pinch of coarse salt.
