1. Strawberry Cheesecake with Agave Syrup

This strawberry cheesecake is a family favorite, blending fresh berries and cream cheese with a lighter touch. The low-sugar biscuit base keeps it calorie-friendly without sacrificing taste.

Ingredients (Serves 8)

  • 125 g butter
  • 200 g Céréal Less Sugar Double Delight (available at Albert Heijn and Jumbo)
  • 4 lemons (washed)
  • 400 g (lactose-free) cream cheese
  • 8 eggs, separated (use an egg yolk separator for ease)
  • 200 ml soy cooking cream
  • 4 tbsp agave syrup
  • 2 tbsp cornflour
  • 150 g fresh strawberries
  • 1 tbsp Stevia Sweet powder

Preparation

  1. Preheat oven to 170°C. Melt butter in a saucepan.
  2. Crush Céréal Double Delight cookies in a sturdy bag with a rolling pin.
  3. Mix crumbs with butter, press into greased 22 cm springform pan. Chill.
  4. Grate lemons, combine zest with cream cheese, egg yolks, soy cream, and agave. Beat smooth, add sifted cornflour.
  5. Whip egg whites stiff, fold into mixture. Bake 1 hour.
  6. Test with skewer; bake extra 5 min if needed. Cool fully.
  7. Top with strawberries and Stevia powder.

2. Cheesecake with Blueberries and Raspberries

A refreshing no-bake option with a cottage cheese filling and berry topping on a coconut cookie base.

Ingredients

Base:

  • 80 g butter
  • 250 g Céréal coconut cookies (available at Albert Heijn and Jumbo)

Melt butter, crush cookies, mix, and press into lined cake tin. Chill 1 hour.

Filling:

  • 500 g full-fat cottage cheese
  • Pure vanilla (to taste)
  • 5 gelatin sheets
  • Zest of 2 washed lemons
  • 150 g thawed raspberries and blueberries
  • Fresh berries for garnish
  • Céréal strawberry jam (available at Jumbo, Coop, Hoogvliet, Deen, Vomar)

Soak gelatin, dissolve in warm water. Mix with cottage cheese and vanilla. Warm and blend thawed berries, combine. Spread jam on base, add filling. Chill 3 hours. Garnish with fresh berries.

3. Mango Pie with Date Base

Kids-approved (mostly!), this fruity pie from Eatclean.nl uses natural fruit sugars. Note: Higher in natural sugars from dates and mango.

4. Oatmeal Strawberry Cake
