This is how you make marshmallows without sugar

Light a fire outside and roast marshmallows over it:it doesn't get any cozier. Do you want a healthier version of this snack? Then you can make it yourself without sugar.

Recipe :Sugar-free marshmallows

You need this

  • 3x the protein of 3 large eggs
  • 14 gelatin sheets
  • 80 grams of icing (also called sugar-free 'powdered sugar', for example from Sukrin icing or Greensweet frost)
  • few drops of vanilla extract
  • 1 tbsp coconut flour
  • pinch of salt
  • (natural) dye of your choice
  • milk chocolate for dipping (optional)

This is how you make it

Line a 20 x 20 cm baking tin or baking dish with baking paper and sprinkle with a thin layer of coconut flour. Soak the gelatin sheets in cold water until softened. Mix the egg whites in a bowl with an (electric) mixer. Keep beating and also add the icing ('powdered sugar') and the vanilla extract. Continue beating until you can make peaks with the batter and it is completely stiff. Drain the gelatin in a sieve. And put it in a pan. Reduce the heat to low and allow the gelatin to melt slowly. When there are no more pieces of gelatin, add them to the meringue. Fold in the gelatin until you have a thick batter and everything is well mixed together. Pour or spatula the batter into your baking tin and sprinkle some coconut flour over it. Let it set in the fridge for at least 3 hours before cutting into squares. You can now melt the chocolate and briefly dip the marshmallows in it.

Hint

No fire outside and no gas stove? You can also use a gas burner or a small brûlée burner.
