Ingredients

  • Egg whites from 3 large eggs
  • 14 gelatin sheets
  • 80 grams sugar-free icing sugar (e.g., Sukrin or Greensweet Frost)
  • A few drops vanilla extract
  • 1 tbsp coconut flour
  • Pinch of salt
  • Natural food coloring (optional)
  • Milk chocolate for dipping (optional)

Instructions

Line a 20 x 20 cm baking tin with parchment paper and dust with a thin layer of coconut flour. Soak the gelatin sheets in cold water until soft. In a bowl, beat the egg whites with an electric mixer until frothy. Gradually add the sugar-free icing sugar, vanilla extract, and salt, beating until stiff peaks form.

Drain the softened gelatin and place in a saucepan over low heat. Stir gently until fully melted and smooth. Slowly fold the melted gelatin into the egg white mixture until combined into a thick batter.

Pour or spread the batter into the prepared tin, dust with more coconut flour, and refrigerate for at least 3 hours until set. Cut into squares. For extra indulgence, melt milk chocolate and dip the edges.
