This is how you make an avocado rose

You can safely call Colette Dike the queen of avocado roses. You have probably seen the works of art on Instagram. The good new if you want to try it yourself:it's not as hard as it looks.

Make an impression at your next dinner party by turning the avocado into a flower. Santé's Shirley got a quick workshop from Colette of Food Deco at Amsterdam restaurant The Avocado Show. You can see her end result in the photo at the top of this article.

The most important lessons:

  • Cut half an avocado into slices as thin as possible. You can roll up thick slices less neatly.
  • Treat the avocado with, for example, sushi vinegar to keep the color beautiful. It also gives a shine, a plus for your photo.
  • Carefully separate the avocado slices by rubbing them with your hands and arrange the slices in a long string. Make sure the slices are just touching each other.
  • And the most important thing we learned:don't be too scared, an avocado can take quite a bit. And since you only need half an avocado, you have two chances. Save the other half of the avocado?
