Ingredients
- 6 firm stewing pears
- 1 star anise
- 1 cinnamon stick
- 75g white caster sugar
- 350ml + a little extra berry juice
- 150ml water
- 1 teaspoon cornstarch
Preparation
- Peel the pears. In a deep saucepan, combine the berry juice, water, and sugar. Add the star anise and cinnamon stick, then place the pears in the liquid. They won't be fully submerged, so turn them occasionally. Add more berry juice if needed.
- Simmer the pears over low heat for 90 minutes. Remove the pears from the pan. In a small bowl, mix a little warm berry juice with 1 teaspoon cornstarch to form a smooth paste. Stir it into the remaining juice in the pan and cook until thickened. Use the glossy sauce to coat the pears.
