Indulge guilt-free with these delightful whole grain cookies, layered with fresh kiwi slices and dipped in rich dark chocolate. A nutritious, fun snack everyone will love.
Ingredients
For 12 cookies
- 4 Zespri Green kiwi
- 100 g dark chocolate
- 140 g wholemeal flour (+ extra for dusting)
- ½ tsp baking powder
- 75 g cold butter
- 20 g cane sugar
- 1 pinch of salt
- 30 ml cold water
- 1 tbsp agave syrup
- 1 tsp vanilla extract
- 1 tbsp milk (to brush the cookies)

Preparation method
- Preheat the oven to 160°C. Combine the flour, sugar, baking powder, and salt. Cube the cold butter and mix into the dry ingredients until crumbly. A food processor works great for this step.
- Add the cold water, vanilla extract, and agave syrup. Knead into a soft dough. Dust lightly with flour, wrap in plastic, and chill in the fridge for 30 minutes.
- Flour your work surface, roll the dough to 1-1.5 cm thick, and cut out rounds about the size of a kiwi slice.
- Brush the cookies with milk and bake on a lined tray for 18-20 minutes until golden.
- Meanwhile, melt the dark chocolate in a bain-marie and slice the kiwis into 1-1.5 cm rounds.
- Once cookies are fully cooled, stack them: cookie-kiwi slice-cookie. Dip half into the melted chocolate and set on parchment paper to harden. Enjoy!
