Ingredients
- 2 slices of white casino bread
- 200 g New Standard Chicken minced meat
- 1 red onion
- 2 sprigs of sage (from the Italian spice mix)
- 25 g butter
- 1 small apple, e.g., Elstar
- 50 g walnuts
- 1 whole free-range chicken (about 1.4 kg)
- Additionally required: immersion blender with meat grinder, roasting pan (20 x 30 cm)
Preparation Method
This impressive dish takes 95 minutes total, but most of that (75 minutes) is hands-off roasting time—perfect for tackling sides or sides.
- Preheat the oven to 180°C. Meanwhile, finely grind the bread using the immersion blender's chopper. Combine the breadcrumbs with the chicken mince in a large bowl.
- Finely chop the onion and sage leaves. Melt the butter in a frying pan and sauté the onion and sage for 1 minute. Peel and core the apple, then cut into small cubes; add to the pan and cook for 2-3 minutes. Coarsely chop the walnuts and fold into the apple mixture.
- Combine the apple-walnut mixture with the mince and breadcrumbs. Remove the elastic from the chicken (keep it handy), stuff firmly with the filling, fold the legs back, and secure with the elastic.
- Roast in the preheated oven for 1 hour 15 minutes. Rest for 5 minutes, then transfer to a platter. Save pan drippings for gravy; use leftover herbs in pasta sauce or stock.
