Ingredients

  • 300 g basmati rice
  • 300 g Quorn finely chopped
  • 2 Shanghai pak choi
  • 4 spring onions
  • 1 lime, juice only
  • 15 g coriander
  • 15 g flat-leaf parsley
  • 15 g mint
  • 2 cloves garlic, crushed
  • 5 cm ginger, grated and cut into fine strips
  • 2 tbsp soy sauce
  • 2 tsp honey
  • 2 tsp Chinese 5-spice powder
  • 1 tsp sesame oil
  • sunflower oil (for frying)
  • salt and pepper, to taste

Preparation Method

  • Cook the basmati rice according to package instructions.
  • Slice the Shanghai pak choi into strips and remove stems from the herbs. Finely chop the spring onions, reserving one-third for garnish.
  • Heat sunflower oil in a wok or frying pan over high heat. Add the Quorn mince, garlic, and ginger; stir-fry for 2 minutes.
  • Stir in lime juice, soy sauce, honey, Chinese 5-spice, and sesame oil. Mix well to infuse flavors, then add pak choi and most of the spring onions. Stir-fry for 5 more minutes. Season with salt and pepper to taste.
  • Serve the crispy Quorn mince over basmati rice, topped with fresh herbs and reserved spring onions.
