Ingredients
- 300 g basmati rice
- 300 g Quorn finely chopped
- 2 Shanghai pak choi
- 4 spring onions
- 1 lime, juice only
- 15 g coriander
- 15 g flat-leaf parsley
- 15 g mint
- 2 cloves garlic, crushed
- 5 cm ginger, grated and cut into fine strips
- 2 tbsp soy sauce
- 2 tsp honey
- 2 tsp Chinese 5-spice powder
- 1 tsp sesame oil
- sunflower oil (for frying)
- salt and pepper, to taste
Preparation Method
- Cook the basmati rice according to package instructions.
- Slice the Shanghai pak choi into strips and remove stems from the herbs. Finely chop the spring onions, reserving one-third for garnish.
- Heat sunflower oil in a wok or frying pan over high heat. Add the Quorn mince, garlic, and ginger; stir-fry for 2 minutes.
- Stir in lime juice, soy sauce, honey, Chinese 5-spice, and sesame oil. Mix well to infuse flavors, then add pak choi and most of the spring onions. Stir-fry for 5 more minutes. Season with salt and pepper to taste.
- Serve the crispy Quorn mince over basmati rice, topped with fresh herbs and reserved spring onions.
