Recipe for Sardines with Creamy Peppadew Filling

A summer evening in the garden with friends; that includes delicious fish tapas. You really don't need to have Spanish roots to prepare the tapas.

Ingredients
Appetizer for 6 people
Preparation time 15 minutes

  • 6 fresh or thawed sardines, cleaned
  • 100 g Peppadews
  • 250 g fresh cream cheese natural
  • 2-3 tbsp olive oil

This is how you prepare the sadines
Heat the oven grill. Cut the sardines on the belly to make room for a filling. Finely chop the peppadews and mix with the cream cheese. Stuff the sardines with it. Brush the fish all over with oil and sprinkle with salt and pepper. Place the sardines side by side on a baking tray and roast them under the hot oven grill for 5-10 minutes, depending on the size, until golden brown and cooked through. Serve with crusty bread.

Hint Chop 1 red pepper very finely and mix with a few tablespoons of extra virgin olive oil. Serve the chili oil with the sardines, for those who like spicy.
