Vibrant Beet, Pineapple, and Carrot Smoothie Recipe

Beets are incredibly versatile, lending themselves to creative dishes like this stunning smoothie. Its vivid color comes straight from the beets, making it as beautiful as it is nutritious.

Ingredients (serves 4)

  • 2 baby pineapples
  • 200 g beetroot
  • 2-3 cm ginger root
  • 1 lime
  • 1-2 tbsp maple syrup
  • 200 ml carrot juice
  • 2 tsp rapeseed or olive oil
  • Additionally needed: blender or hand blender with high mixing cup

Instructions

  • Peel the pineapples and remove the crowns. Cut into pieces. Peel the beets thinly and chop into chunks. Peel the ginger and slice. Squeeze the lime.
  • Add all prepared ingredients and maple syrup to the blender or pitcher.
  • Blend until smooth. Gradually add carrot juice and ice-cold water to reach your preferred consistency. Pour into glasses and drizzle with oil.
