  • 25 cl lukewarm water

Instructions

Prep: 15 mins – Bake: 30 mins

  1. Pour the flour onto your work surface, forming a well in the center.
  2. Dissolve the yeast in 25 cl warm water and pour into the well.
  3. Add 3 whole eggs, sugar, and a pinch of salt.
  4. Knead until you have a smooth, not-too-soft dough.
  5. Incorporate the milk gradually.
  6. Knead the butter separately, then work in one-third of the dough until homogeneous. Gradually add the remaining dough.
  7. Cover and let rise for 2 hours in a warm spot (25°C), draped with a clean cloth.
  8. Preheat oven to 180°C.
  9. Butter a mold and fill with the dough.
  10. Score diamond patterns on top with a knife tip; brush with beaten egg yolk.
  11. Bake for 30 minutes.
  12. Cool before serving.
