During busy weekdays, my lunch break rarely allows time to sit down, so I often eat on the go. But I refuse to grab just anything—instead, I whip up a balanced homemade Chicken Club Sandwich that costs me only €2.19.

There are endless recipes for delicious sandwiches. I love switching up bread varieties and ingredients to suit my cravings. This version keeps things light and wallet-friendly.

Ingredients

  • 4 slices of wholemeal bread
  • 1 slice of chicken breast
  • 1 tomato
  • 1 avocado
  • 2 lettuce leaves (such as romaine)
  • 50 g fresh cheese (like fromage frais)

Instructions

Preparation: 10 mins

1. Wash and slice the tomato.

2. Halve the avocado, remove the pit and skin, and cut into strips.

3. Finely chop 2 lettuce leaves and halve the chicken breast slice.

4. Lightly toast four slices of wholemeal bread.

5. Spread fresh cheese on the first slice, add some chopped lettuce and tomato slices, then top with a second slice spread with more cheese.

6. Layer on more lettuce and the chicken breast, then add the third slice of bread.

7. Top with avocado slices and remaining lettuce, then finish with the last slice of bread.

8. Gently press down the sandwich and cut diagonally into two triangles.

Done! Wrap in foil and pack for lunch.

Bonus Tip

To peel your avocado easily without bruising the flesh, warm it in your hands for a few minutes—the skin slips right off!
