  • 90g sugar
  • 5 eggs
  • 140g walnuts
  • 100g chocolate
  • 40g breadcrumbs
  • 75g butter
  • 1 vanilla pod

Instructions

Begin by breaking the chocolate into pieces and melting it gently in a bain-marie.

Separate the egg yolks from the whites. Whisk the yolks with the sugar until the mixture turns pale and creamy.

Finely chop the walnuts, reserving some for later. Fold the chopped walnuts into the yolk-sugar mixture, along with the breadcrumbs, softened butter, and melted chocolate.

Split the vanilla pod lengthwise and scrape out the seeds, adding them to the batter for authentic vanilla flavor.

Butter a mold and line the bottom with the reserved walnuts.

Beat the egg whites to stiff peaks, then gently fold them into the batter.

Pour the mixture into the prepared mold and bake for about 30 minutes at 200°C (thermostat 5). For individual portions, use small molds.
