Ingredients for 6 servings
Preheat your oven to 200°C (thermostat 6).
Preparing the dough
Pour ¼ liter of water into a saucepan and bring to a boil. Add the salt and butter, cut into small pieces, at the same time.
Once the mixture starts to rise, remove the pan from the heat and quickly incorporate the flour. Mix vigorously until smooth.
Return the pan to low heat for 1-2 minutes, stirring continuously to dry out the dough slightly.
Off the heat, add two eggs one at a time, mixing well after each addition.
Transfer the dough to a piping bag. On a buttered baking sheet, pipe the dough into a crown shape. Bake for about 20 minutes until golden brown.
Remove from the oven, cool completely, then slice the crown horizontally through its thickness.
Preparing the whipped cream
Melt the chocolate in a saucepan with 4 tablespoons of water over a bain-marie. Meanwhile, mix sugar with the cream and whip until stiff peaks form.
Incorporate the melted chocolate into the whipped cream and allow to cool.
When ready to serve, fill the crown with the chocolate whipped cream and reassemble.
