Wash the sour cherries, remove stems and pits. Coarsely crush the pits and infuse them in the Bordeaux wine.
Boil the wine with the crushed pits for 10 minutes to extract their flavor.
Meanwhile, simmer the pitted cherries with sugar, lemon zest, and cinnamon stick for 10 minutes.
Transfer cherries to a bowl. Strain the hot wine over them, discarding the pits.
Serve warm in small bowls – a timeless dessert from classic French tradition.
