Making onion soup in the slow cooker

Want to make a delicious onion soup for the slow cooker? I have a nice recipe for you. I used to make this onion soup in the pan, but my son gave me the idea to make it in the slow cooker and it turned out great. And nice and easy of course, as most slow cooker recipes are.

I regularly get questions from people who wonder why I make a certain recipe in the slow cooker, such as this slow cooker cake. My answer is always 'because it's easier'. It's never faster anyway, haha. But because you only have to work with it in the beginning, I don't think that is such a problem. It takes a while to prepare and then the slow cooker does its job, also with this onion soup. And I love that. Nice and easy, really something for working mothers!

Ingredients for this delicious onion-soup from the slow-cooker

  • 1 kilo of onions cut into half rings, preferably use sweet onion
  • 1 tablespoon brown sugar
  • little butter
  • 4 stock cubes (I use beef stock for this slow cooker onion soup)
  • 2 liters of water
  • 2 tbsp sweet soy sauce

Herbs:

  • 3 fresh bay leaves
  • dried thyme (about 2 teaspoons)
  • 4 garlic cloves chopped
  • Salt and pepper

Would you like to add some baguette with cheese to the onion soup? Then you need some extras:

  • 8 pieces of baguette (you can also use rusk by the way)
  • 200-300 grams of grated cheese

How to make this onion-soup recipe in the slow-cooker

  1. Cut the onions into half rings (preferably thinner rings)
  2. Crush the garlic
  3. Fry the onion briefly in the butter in a pan with the garlic
  4. Add the thyme and the brown sugar and fry gently for a while
  5. Put the onion mixture in the slow cooker
  6. Add water (boiling or not, I use the quooker for this) with the stock cubes
  7. Add bay leaves and the soy sauce
  8. Put the slow cooker on low for about 6-8 hours and then your onion soup is ready to eat
  9. Add the salt and pepper to taste. I certainly wouldn't start with this, but only taste and add it towards the end

Would you also like a baguette or a rusk in the onion soup with some cheese, like in the real French onion soup? You can simply put it in your soup, but you can also choose to put the baguette with the cheese in the oven fifteen minutes before you serve the soup. Let the cheese melt for a while and then add the baguettes to the soup just before serving.
