Slice the apples and cook them into a compote with the sugar, split vanilla pod, and lemon zest. Stir until thickened and dry. Let cool completely.

Preheat oven to th. 8 (240°C).

Slice brioche thinly, butter each slice, and toast buttered side up in a toaster or under the broiler.

Line a charlotte mold: bottom with triangles, sides with overlapping rectangles, toasted side facing out.
