Line cheesecloths with paper towels. Fill with the prepared cream mixture, tapping the base gently on the work surface to settle. Fold the paper towels over the cream.
Place in a colander set over a bowl and refrigerate for 6-8 hours to allow the whey to drain.
To serve, unmold gently onto the center of the plate, carefully removing the paper without disturbing the cream. Drizzle with chestnut honey coulis (or all-flower honey or fruit coulis—adjust the name as needed). Garnish with sliced strawberries, orange segments, kiwi, and fresh mint leaves.
