Surprise Fingerling Potato Bites with Salmon Roe and Champagne Cocktail

Ingredients (Serves 4)
  • 8 small fingerling potatoes
  • 10 cl liquid cream
  • 1 teaspoon horseradish
  • Salmon roe
  • Fine herbs (fennel, dill, chervil, chives, etc.)
  • Salt and ground pepper
  • Chilled champagne
  • 2 dashes Angostura bitters
  • 2 dashes cognac
  • 1/2 teaspoon powdered sugar

Wash the fingerling potatoes and steam for 10-15 minutes until tender. Let cool, halve, and hollow out the centers.

Whip the very cold liquid cream with salt, pepper, and horseradish until fluffy.

Fill the potato halves with cream, then top with salmon roe and fresh herbs for an elegant touch.

Champagne Cocktail (1 glass): Pour chilled champagne into a flute. Stir in powdered sugar, 2 dashes Angostura bitters, and 2 dashes cognac.
