Grilled Eggplant Toasts with Creamy Goat Cheese

  • 8 slices grilled frozen eggplant
  • 4 Picodon-style goat cheeses (not too dry)
  • 2 tablespoons olive oil
  • 1 teaspoon oregano
  • Freshly milled pepper, to taste

Difficulty: Easy

Preheat the oven to 240°C (thermostat 8).

Slice the goat cheeses thinly.

Arrange the eggplant slices on a lightly oiled baking sheet.

Top with cheese slices, sprinkle with oregano, and drizzle with olive oil.

Bake for 5 minutes until the cheese melts.

Plate with salad garnish, add fresh pepper, and serve hot.
