Anchovy-Stuffed Potatoes with Sausage: Flavorful Recipe for 8
Ingredients (Serves 8):
- 500 g anchovies
- 1 tablespoon oil
- 1 lemon
- Salt and pepper
- 5 sprigs parsley
- 300 g sausage meat
- 1 small onion
- 1 clove garlic
- 3 tarragon leaves
- Pinch of cayenne
- 8 large potatoes
- 100 g butter
- 250 ml meat broth
Instructions:
- Scale, gut, and wash the anchovies. Fillet them, chop finely, and place in a dish. Drizzle with oil and lemon juice, add chopped parsley, salt, and pepper. Marinate for 1 hour.
- Make the stuffing: Finely chop onion, garlic, remaining parsley, and tarragon. Mix into sausage meat with diced marinated anchovies and cayenne. Season with salt and pepper.
- Peel and wash potatoes. Cut off one end from each, hollow out using a spoon handle or tool. Place scooped potato flesh in a buttered baking dish; season lightly with salt and pepper.
- Stuff hollowed potatoes with mixture, replace cut ends to seal. Arrange in dish, pour over broth, dot with remaining butter. Bake in medium oven for 35 minutes, basting occasionally.
- Serve directly from the baking dish.
