As a passionate gluten-free recipe developer, I've crafted three antipasti recipes for the latest Schär cookbook: sweet-savory Raw Food Energy Balls, classic Mediterranean Bruschetta, and a creative twist on Surprise Bread.

Ingredients
– Schär Brioche bread
– White ham
– Fresh basil
– Tomatoes
– Olive oil
– Pinch of salt & pepper
Steps
Brioche Bread
1. Toast Schär brioche bread slices in the oven or toaster for a few minutes until crunchy.
Topping & Assembly
2. Once golden, remove slices and top with diced tomatoes and white ham. Season with salt and pepper, add fresh basil leaves, and finish with a drizzle of olive oil. Serve and enjoy.




Ingredients
– Schär Maestro Classic sliced white bread
– 500 g black olives
– 50 g capers
– 1 tbsp olive oil
– Pinch of cumin
– Grilled peppers in olive oil
– Sun-dried tomatoes
– Fresh basil
Steps
Bread
1. Toast Schär sliced white bread in the oven or toaster for crunchiness.
Black Olive Tapenade
2. Blend 500 g black olives, 50 g capers, 1 tbsp olive oil, and a pinch of cumin.
Pepper & Sun-Dried Tomato Spread
3. Blend 500 g grilled peppers in oil, 100 g sun-dried tomatoes, and fresh basil leaves.
Assembly
4. Trim bread edges, layer slices into rectangles like sandwiches—some with tapenade, others with spread. Arrange on a slate for serving with white wine.





Ingredients
– ½ sachet Schär Gluten-Free Crackers
– 2 tbsp cashews
– 12 soft dried apricots
– 2 tbsp goji berries
– 3 tbsp shredded coconut
– 2 tbsp chia seeds
– 1 tbsp water
– Coconut shavings (or grated coconut)
– Cocoa powder
Steps
Base Mixture
1. Blend Schär crackers, cashews, apricots, goji berries, shredded coconut, and chia seeds into a paste (add water as needed).
Form Balls
2. Roll into balls. Coat some in cracker crumbs, others in cocoa powder and coconut mixture. Enjoy!
