Step-by-Step Preparation
Cook the lentils in a saucepan with 2.5 times their volume of cold water. Add the onion studded with 2 cloves, thyme, 2 bay leaves, salt, and pepper. Bring to a boil, then partially cover and simmer for 20-25 minutes until the lentils are tender.
Discard the bay leaves, thyme, and cloves. Slice the onion and return it to the lentils. Stir in 2 tablespoons of Dijon mustard and simmer gently over low heat, stirring occasionally to prevent sticking.
Meanwhile, poach the smoked sausages in simmering water for 10-15 minutes. Add them to the lentils.

Note: For a variation, swap smoked sausages for sautéed smoked bacon bits, adding them after the lentils and mustard.
