In a large casserole dish, heat oil over medium heat and sauté the chopped onion and rabbit pieces until golden.
In a bowl, whisk together the flour, mustard, sour cream, and crumbled Kub broths. Stir in the water, then pour the mixture over the rabbit. Season lightly with salt and pepper, and add a sprig of rosemary.
If desired, add potatoes cut into chunks for a hearty accompaniment.
Cover and simmer on low heat for 45 minutes, until tender.
Serve rabbit with mustard sauce alongside vegetables, tagliatelle, or your favorite sides.
